Well, there’s game designers

They don’t do the programming, but they do work on the story, they choose the best characters that fit the game, and design the levels - singleplayer and multiplayer

I don’t think there is a career in video game analysing for individuel companies but there will be some sort of career in analysing particualar games that come out. Unfortunately analysing what makes video games entertaining wouldn’t be a full time career but simply a project in a career.
